• Leftovers? Don’t throw them out! Only a few pieces left of that broccoli or just a half bag of spinach? They can still be used!
  • Stir fries are great ways to incorporate bits and pieces of vegetables with tofu or meat, or you can go all-vegetable with a savory sauce. Soups are also good ways to marry odds and ends. How about a vegetable puree soup?
  • Think casseroles, too. They are easy and time-saving and make a great one-dish mixture of foods that might otherwise, all alone, be wasted.
  • Finally, think of toppings—a topping on a sandwich, pasta, or on bread or rice, again with a little taste of sauce or condiment, could be the coup-de grace!
  • If you can’t use what you have left over, you can always recycle it in a compost that can be used to make richer soils for potted plants, seedlings, or in your garden.
